A secret to those potato pancakes I found to be ..when you add a little onion cut it up as small as you can. Ideally "ribbon" thin slice it and then chop that. Really distributes the onion flavor and changes the characteristic of onion flavor to more of what I would call that western flavor in potato pancakes. Also added a little corn meal into the avocado oil I fried them in. The potatoes were today's left over breakfast potatoes. A little potassium (in potatoes)can do wonders for you.
